Coconutty Cupcakes

Print Friendly and PDFPrint Friendly

A quick, delectable fix for those coconut cravings.

You won't miss the frosting. I promise! :)

yields 2 dozen cupcakes
Cupcake
- 2  C all-purpose flour
- 3/4 C sugar
- 1/2 C butter melted and cooled
- 2 eggs
- 1 tsp vanilla extract
- 2  tsp baking powder
- 1 C coconut milk
- 1/2 tsp (small pinch) of salt
Coconut Topping
- 3 C dessicated coconut
- 2 C powdered sugar
- 2-3 tbsp coconut milk
- 1/8 tsp vanilla extract

Preheat oven to 350 degrees F

In a bowl, whisk together all the dry ingredients (you can also sift if you like)

In another bowl, beat or whisk together butter and sugar until fluffy and light, combine eggs one at a time.

Add dry ingredients in 3 batches mixing in between. After adding first batch, mix, then add milk. Add next 2 batches, mixing in between. DO NOT OVER MIX or else cupcakes won't be as fluffy!

Fill cupcake liners 3/4 full, then bake for 18-20 minutes or until toothpick inserted comes out clean.
Topping: Set aside dessicated coconut into a medium sized bowl.

Combine powdered sugar, coconut milk, and vanilla extract to form glaze. Using pastry brush, glaze tops of cupcakes.

Dip tops of cupcake into bowl of dessicated coconut

BABYCAKES Cupcake Maker Review

Print Friendly and PDFPrint Friendly

Our best piped frosting attempt (kinda hard to do with whipped cream hehe)

So recently, my sister decided to purchase one of those adorable mini cupcake makers. The brand in particular, babycakes. I personally quite enjoy baking the old fashioned way from scratch, but when she brought it over it totally reminded me of being a kid again. It comes in two colors, yellow and pink and includes a pastry cutting tool, crust forming tool, heavy-duty piping bag, 4 stainless steel decorating tips, coupler, recipe book and owner's manual.

Overall, it was very fun and a perfect, less messy activity to enjoy with the kids. It gets really hot though, so you might not want to let the kids operate it directly, but it's very effective for those who currently don't have a working oven (guilty!), are not really into baking or who are short on time.

The price ranges in the $30 area. Great gift idea for the holidays!

Let's face it, who doesn't like cupcakes??

Peace&Love,

Cookies 'n' Cream Cupcakes!

Print Friendly and PDFPrint Friendly
It's funny I managed to get my chocolate cupcakes recipe down pat on just trial #2, but when it came to making basic vanilla cupcakes for the first time, I pretty much failed miserably. Luckily I have one brother who totally devoured them despite the closer resemblance they had to cookies rather than cakes and another brother who was able to scientifically figure out what went wrong and correct it.

I decided to do something I haven't really done in a while and that is I actually followed a recipe this time haha. Thank you to foodnetwork.com for providing me with a good backbone to get creative (well not really lol). I adapted my recipe from their vanilla cupcake recipe, however it did not list a specific author or chef, so I will just credit the Food Network website :)

I also blame the show, Cupcake Wars on FoodNetwork for reminding me weekly my obsession with cupcakes. I've always loved them, but now I just want to make them everyday!! haha
