Cornbread w/ Egg & Salsa

A yummy way to enjoy cornbread for brunch.  

- cornbread (Recipe Below)
- egg 
- cooking oil
- salsa (homemade or store-bought)
- fresh cilantro chopped

Heat up the oil and fry the egg over medium/easy like you normally would.  Lay eggs on top of cornbread garnished with some store-bought salsa or you can also make your own pico de gallo. Finish off with some cilantro on top. 



If you'd like to try my brother's corn bread recipe,


Cornbread

- 1 C cornmeal
- 1 1/2 C all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- sugar to taste (I like slightly sweetened cornbread)
- 2 eggs beaten
- AT LEAST 3 tbsp butter softened
- 1 C milk

Preheat oven to 400 degrees F

Soak cornmeal in milk for 5-10 minutes
 
In a medium bowl, whisk together dry ingredients. Add eggs and butter than fold until well combined, but do not overmix.

Bake for about 10-15 minutes or until slightly golden brown on top.
