Cold

While the weather may be cooling down outside, it doesn't necessarily mean that you'll only have sipping on hot chocolate and eating soups to look forward to all season long. Nothing wrong with that of course, but I find that sometimes a nice cool & refreshing snack is what helps me to appreciate the comforts of a warm and cozy home that much more

Try one of my Tropical Nut Creamsicles and the only cold you'll be thinking of is the luscious, sweet, & creamy joy sitting in your freezer waiting for you to warm it up! :)

Inspired by Aarti Sequeira's Earl Grey Kulfi Pops.

Of course, when I decided I wanted to make this, we had just run out of Earl Grey tea. Buutt, I didn't let that stop me. Planning is something I definitely need to work on when it comes to cooking, but I find that running on impulse, makes for great improv in the kitchen and ultimately leads to some awesome NEW recipes and ideas I probably would've never thought of had I just been following and relying on a 'step by step' process! :)

I checked to see what we DID have--some green tea, coconut milk, condensed milk, etc. The wheels began to turn. I went ahead and left out the green tea part and just stuck with pure creamy tropical flavors instead. There's always the next time around!!

I call them my Tropical Nut Creamiscles! (name courtesy of my mom! hehe) My family seemed to love it, so hopefully you will too!


- 1 C coconut milk
- 1 C condensed milk
- 1 tsp vanilla extract
- 1/4 C milk (heavy cream preferred)
- 1 heaping handful of chopped roasted hazelnuts




Combine all ingredients in a saucepan over medium-high heat.
Let steep for 5 minutes.






After mixture has cooled. Poor into a larger measuring cup or pitcher with a spout.
(easier to poor into molds)






Stick in the freezer for
at least 2-3 hours. 


When taking out, dip the molds into some hot water for a few seconds until you can see the edges pull away from sides of mold. Don't try to force out while frozen, or you might  risk pulling out the popsicle stick/handle!
