Chocolate Chip Cookies!

Chewy, but not too chewy...
Crunchy, but not too hard...

Just right?? yep, pretty much! haha :)





- 1 C granulated sugar
- 1 C medium brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 C all-purpose flour
- 1 C oatmeal slightly crushed
- 1 tsp baking soda
- 2 tsp hot water
- 1/2 tsp salt
- 2 C semi-sweet chocolate chips
- optional -
- 1 C walnuts 

Preheat oven to 350 degrees F.

Beat together eggs & sugars until creamy. Dissolve baking soda in hot water and add to mixture. Add vanilla extract.

In a separate bowl, whisk together dry ingredients until well incorporated. Slowly add dry ingredients to wet ingredients and beat until batter is formed. Fold in chocolate chips and nuts until evenly throughout.

Spray cookie sheets with non-stick spray (lining sheets with foil or parchment paper is optional). Using a heaping regular teaspoon, form chunks and place in even rows 1 1/2 inches apart.  
*You can make the cookies as big or as thick as you like. I like mine thinner and easier to eat hehe.*

Bake for 8-10 minutes or until it starts to brown around the edges.
