Two of my favorite desserts of all time and not just during the holidays are Pumpkin Pie and Cheesecake. I figured why not create a beautiful marriage of both!!! The result is simply delectable.

Crust
- 8 pieces of graham crackers (the whole rectangle, not the little pieces)
- 1/4 C of melted butter
Preheat oven to 350 degrees F. Grind graham crackers. Combine w/ melted butter until it looks like wet sand. Press and line cake pan. Bake for 10 minutes and let sit until it cools. Crust should harden.
Filling
- 2 8 oz. packages of cream cheese (room temperature)
- 3/4 C granulated sugar
- 1 can of pumpkin puree
- 2 eggs
- 1 1/2 tsp of cinnamon
- 1 1/2 tsp of nutmeg
Beat cream cheese and sugar until creamy. Add pumpkin puree and beat just until combined. Add eggs one at a time while beating. Add vanilla extract, cinnamon, and nutmeg, and beat one last time. DO NOT OVER BEAT!
Bake for 45-60 minutes at 350 °F
