I love using this recipe when I make lasagna as well as mac n cheese. You can certainly make this the traditional way with butter as well if you don't like bacon :)

Bacon Bechamel Sauce
Ingredients
- 3 tablespoons bacon grease
- 3 tablespoons all-purpose flour
- 1 1/2 Cup milk
- pinch (about 1/16th teaspoon) freshly grated nutmeg
- 1/2 teaspoon salt
- In a saucepan over medium heat, melt bacon grease.
- Add flour and stir until paste is formed. Keep stirring for another minute to cook flour. It'll be a sandy light golden color.
- Increase fire to medium-high heat. Switch to a whisk and slowly add milk while whisking away lumps. Continue whisking until sauce is thickened.
- Add more milk if you want thinner consistency.
- Add nutmeg and salt.
