Bacon Bechamel Sauce

I love using this recipe when I make lasagna as well as mac n cheese. You can certainly make this the traditional way with butter as well if you don't like bacon :)

Bacon Bechamel Sauce

Ingredients
  • 3 tablespoons bacon grease
  • 3 tablespoons all-purpose flour
  • 1 1/2 Cup milk
  • pinch (about 1/16th teaspoon) freshly grated nutmeg
  • 1/2 teaspoon salt
Cooking Directions
  1. In a saucepan over medium heat, melt bacon grease.
  2. Add flour and stir until paste is formed. Keep stirring for another minute to cook flour. It'll be a sandy light golden color.
  3. Increase fire to medium-high heat. Switch to a whisk and slowly add milk while whisking away lumps. Continue whisking until sauce is thickened.
  4. Add more milk if you want thinner consistency.
  5. Add nutmeg and salt.
