Grilled Corn Salsa, GO RAVENS!

Another February is upon us, which means SUPERBOWL is as well!! Woohoo!! haha I'm not gonna lie, unless the Bears are competing, I normally don't get too caught up in all the hype. I still end up watching it regardless though to see especially the half-time show hehe. With that said, I do like the Baltimore Ravens, so I'm rooting for them this year!

Here's a simple, yet tasty fun dish perfect for entertaining. I love the freshness of it as well as the spicy kick from the jalapeno :)




Spicy Grilled Corn Salsa

Ingredients
  • 3 or 4 medium sized corn on the cob grilled
  • 2 green onions chopped
  • 1 jalapeno pepper chopped
  • pinch salt (or to taste)
  • pinch black pepper (or to taste)
  • 1/4 cup white wine vinegar
  • 1/4 cup extra virgin olive oil
Cooking Directions
  1. Peel back and remove corn husks and silk. Rub corn with butter/or olive oil. Wrap corn with foil and grill for 10-15 minutes. Let cool.
  2. Using the flat top of corn as a base on your chopping board. Run your knife down the sides of the corn releasing the kernels.
  3. Combine rest of ingredients with corn in a nice serving bowl.

I like to serve this on some toasted bread bruschetta style or with tortilla chips and a side of some extra jalapeno chiles! :)

New Hair, Cookie Monster, & Some Blackhawks Lovin'

New Hair. Wee new haircut!! Sometimes I get a little scissor happy when I really want to do a certain style. I haven't had a blunt bangs since I was really young (like 10 years old haha), so I thought I'd bring it back for the New Year!

Blackhawks Lovin'. Anyways, it's been a few weeks or so since the NHL lockout ended and by golly, I've never been so happy.

So far we're the only undefeated team in the league at 6-0.  Woop Woop!


Cookie Monster. Although I'm quite happy with my own Chocolate Chip Cookie recipe, I like trying other people's versions every now and then. Unless you burn them or something you can't really go wrong. A lot of people have their favorite recipe or their own version that no matter how similar the ingredients are, just taste different in some way.

I recently came across this scrumptious looking cookie video on the interwebs and decided to give it a go. Unfortunately, mine didn't turn out nearly as rustically chewy and amazing as his looked, which I'm not sure why. I did swap out shortening for butter, which I don't normally do..................hmm, okay so that clears things up lol.



Butter vs. Shortening. I normally swear by butter, but I've heard other people say the same about shortening. I will say though, I'm in love with the texture that shortening brings, which is chewier and fluffy. HOWEVER, I'm still missing that overall butter flavor and I quite like the golden brown affect it gives the cookies. As you can see, using shortening creates a more pale, but still slightly golden cookie.

Overall, I like this version and will make it again in the future!

God mat och söt en pojke!

Translation?? Hello! haha jk (it doesn't really say that) :p

One of my passions in life besides food is of course, sports. I'm from Chicago after all aren't I? Recently, of the Chicago Blackhawks' (Stanley Cup champs!), Niklas Hjalmarsson did an awesome segment for abc7 news talking about some of his favorite dishes from his homeland of Sweden. Not many people know this yet because it's a relatively new interest that I've stumbled upon, but I'm falling more and more IN LOVE with Swedish culture. The country (in pictures I've seen) is absolutely gorgeous. Everyone is so beautiful. I love the fashion and most recently through this video my knowledge of Swedish cuisine has now extended farther than just...meatballs & lingonberry jam (which are awesome btw!). And for that I'm grateful! haha



So much deliciousness happening in this video.....and I'm not just talking about the food (gotta love those Swedish boys! :p)
